Although roe from the sturgeon, caught in the Caspian Sea, was what originally became known as caviar, the term 'caviar' now refers to many different kinds of roe in jars.

Unfortunately, the sturgeon is now threatened by extinction due to over fishing, and the price of its roe is outrageously high, even for small
quantities.
So we at SOF-Odden Caviar, have chosen to concentrate on salmon roe, trout roe, lumpfish roe and capelin roe, all of which are much more than fair alternatives.
